PROUDLY INAUTHENTIC RECIPES FROM THE PHILIPPINES TO BROOKLYN
Review by Joe Meny
Dale Talde has been cooking since he was 10. Born to Filipino parents and raised in Chicago, Dale grew up immersed in his family’s culinary heritage, while also being infatuated with American fast food. Dinner might consist of his mom’s sour fish head soup, while the very next day he was feasting on a hamburger and Tater Tots for lunch.
This, his first cookbook, is over 200 pages, and is a combination autobiography, cookbook, and memoir. This is a no-fuss, tell it like it is cookbook. Easy to follow recipes, accompanied with Dale’s personal anecdotes, that together transport you to an Asian-American state of mind while at the same time making you feel like you’re home.
Lovingly written, Talde unabashedly shares his life and family experiences, along with some of the most unique, inauthentic and great tasting Asian-Filipino food, with easy-to-follow recipes including over 60 full-color photos. A full range of recipes from breakfast to snacks to rice, dumplings and noodles, to Vegetables and Salads, to Desserts (and more!). A most helpful ingredient glossary, clearly in the words of Mr. Talde himself, to reference and guide you to what are some of the most common, and not-so-common, ingredients to make many of the dishes described in the book. Recipes like Crispy Sushi Rice with Yuzu Guacamole and Ham, Apple Pancakes with Five-Spice and Coconut-Brown Butter Syrup (yum!), Pad Thai with Bacon, and Rib Eye Steak with Wasabi Salsa Verde. Dale flawlessly re-imagines iconic Asian dishes by combining them with classic Americana along with his signature culinary fireworks that make them so popular in the first place.
Asian-American is more than a cookbook; it’s a cutting edge study in cultural fusion and the story of one inventive Chicagoan who understands the universality of food. You will be happy to discover for yourself that the recipes in Asian American will have you preparing dishes that are fun, bold, a little different, and definitely delicious. Dale is the chef/owner of Talde Brooklyn, Talde Jersey City, Thistle Hill Tavern, Pork Slope, Carrino Provisions, and the recently opened Talde Miami Beach.
